Santa Monica Pineapple is one of those coffees where the flavour is immediately obvious - and still manages to surprise you. Pineapple jumps out of the cup, followed by juicy tangerine, honey sweetness and a soft chocolate finish. It’s tropical, vibrant and deliberately unusual, but still clean and structured enough that it tastes like a great coffee rather than simply a fermentation experiment.
Produced by Jairo Arcila at Santa Mónica in Armenia, Quindío, this Castillo lot was grown at 1,450–1,500 metres and processed using Cofinet’s experimental pineapple fermentation. The coffee undergoes an initial 48-hour anaerobic fermentation followed by an extended fermentation process incorporating pineapple, before being washed and carefully dried. The result is an intensely expressive coffee where controlled fermentation adds another layer of flavour to the underlying coffee that creates that unmistakable pineapple character while retaining sweetness, acidity and balance.
